Eating Vegan In... Naples

Day Four On day four of the holiday, we woke up bright and early to catch a train to Naples to complete our trip to Italy. I had a surprisingly good experience eating vegan in Rome, so I was eager to get to Naples to see if I would have a similar experience. The train journey was extremely long, so we each took a packed lunch with us. I made tomato sandwiches with the tomatoes we got from Rome which lasted me the whole journey. I did not get any photographs of the sandwich, but I’m sure you can imagine what a tomato sandwich looked like. We arrived in Naples at around 4pm local time and we headed straight to the apartment to dump our stuff and explore. Eating Vegan In... Rome

Last summer I went on a family holiday to Italy. This was the first time I would be going abroad since turning vegan. When I think of Italy the first thing that springs to mind is pizza, pasta and cheese. Lots of cheese. I was apprehensive to say the least. I felt so confident being a vegan in the home, but being in a completely different country without the comfort of Linda McCartney made me nervous. Especially as my family are raging meat eaters. I did a quick google of how to pronounce vegan in Italian (it’s vegano for anyone wandering) and I was ready to board the plane. Whilst waiting in the airport, I downloaded an app on the app store called “Restaurant Finder” which provided a list of vegan restaurants, along with how far they were away from me. The app cost me 99p and I would really recommend you download an app like this if you are nervous about going abroad and eating vegan. My mind was at rest a little, and I was ready for Rome. 4 Vegan Breakfast Ideas

Being vegan does not mean your food choices in the morning are limited. Breakfast is my favourite meal of the day and I am not ashamed to admit that most nights I go to sleep excited at the prospects of my breakfast the next morning. Here are four of my favourite ways to start the day. 1. Avocado and grilled tomatoes on toast Avocados on toast is a classic vegan breakfast which is both quick and easy to make, (if we minus the time taken to successfully remove the avocado from its skin). Why not spice it up a little by adding some grilled tomatoes, siracha, chilli flakes and a sprinkling of black pepper. I always drizzle my tomatoes in olive oil before grilling them, it makes such a difference to their flavour. If you are a vegan on a budget, or a millennial who is trying to save for a house, Morrisons sell four wonky avocados for £1.56, a bargain!  2. Porridge  Porridge is so versatile; you can have it with bananas, peanut butter, strawberries or even just sugar. 

Aubergine Katsu Curry

Instagram: emeatsvegan Since posting my meals to Instagram, my aubergine katsu curry has been the most requested recipe of them all. I have explained how to make it in brief in the comments section of my katsu posts, (if you follow my Instagram you will know I make this dish a lot), but here is the full recipe for those who are interested.  You will need: Half an aubergine Flour Water Breadcrumbs (I use the Paxo golden breadcrumbs, but you can easily make your own) Olive oil (you can use your preferred oil, but in my opinion olive is the superior choice) Rice  Salt and pepper to season A handful of spinach For t he sauce Half a can of baked beans Ground cumin Curry powder  Firstly, you will need to preheat your oven to 180 °c.
